Noel Cookies - Banana Bread - Chocolate Mousse - Lemon Mousse - Brigadeiro
Easter Cake


> Noel Cookies
Ingredients:
• ¾ cup of Stevia (Cooking Stevia)
• 3 tablespoons diet margarine
• 1 egg
• 1 teaspoons nut oil
• 1 cup plain flour
• ½ teaspoon de bicarbonate of soda
• 1 ½ cup rolled oats
• ½ cup raisins
• 1 tablespoon of chopped nuts

Method:
1. Mix the Stevia, margerine, egg, nut oil and 3 tablespoons of water.
2. Beat until fluffy.

3. Slowly add the flour, bicarbonate, oats, raisins and nuts. Mix well.
4. With a tablespoon, add porcions to a greased baking tray.

 

5. Bake in preheated medium for 20 minutes until the cookies are golden.
6. Makes about 50 cookies.

> Banana Bread
Ingredients:
• 3 medium ripe bananas.
• 1 cup of de Cooking Stevia
• 1 egg
• 1 teaspoon of vanilla extract
• 1 ½ cup of plain flour
• 1 teaspoon bicarbonate of soda
• 1 teaspoon baking powder
• ¼ cup diet margarine

Method:
1. Mash/Puree the bananas
2. Add the stevia, egg, vanilla and mix well.
3. Add the remaining ingredients and mix well.
4. Transfer to a greased pan and bake in a preheated oven (180°) for 30 minutes.
5. Makes 12 porcions.

> Chocolate Mousse
Ingredients:
• 1 cup dry skimmed milk
• ½ cup boiling water
• 1 teaspoon margarine
• ½ cup cooking Stevia
• 1 pack plain gelatine
• 3 egg whites
• 1 tin light cream
• 2 tablespoons of Stevia Chocolate

Method:
1. Mix non stop in a blender the dry milk, boiling water, margarine and cooking Stevia for 5 minutes por 5 minutos until thick. This is a home made condensed milk.
2. Dissolve the gelatine in 8 tablespoons of boiling water
3. Beat the egg whites until fluffy like snow.
4. Mix the condensed milk with the cream and Stevia Chocolate.
5. Last, add the gelatine and slowly add the egg whites.
6. Put the mix in glasses and take them to the fridge until thick
7. Makes 15 porcions.

> Lemon Mousse
Ingredients:
• 1 home made condensed milk (as on the chocolate mousse recipe)
• 1 tin light cream
• 1 pack of lemon gelatine, dissolved in 1 cup of boiling water
• ½ cup lemon juice with added water
• ½ cup Stevia (Stevita for Cooking)

Method:
1. Prepare the condensed milk as the chocolate mousse recipe
2. Dissolve the gelatine, company credit check let it cool and beat with the remaining ingredients in a blender
3. Transfer to a pirex, take it to the fridge to cool
4.Makes 12 porcions.

> Brigadeiro
Ingredients:
• 1 envelope chocolate dessert pudin powder
• 1 ½ cup of water
• ½ tablespoon diet margarine
• 2 tablespoons of Stevia chocolate (Stevita Chocolate)
• ½ cup of Cooking Stevia
• 1 cup of dry skimmed milk
• 25 grs grated diet chocolate.

Method:
1. In a pan add the pudin powder and water and cook until thick. Allow it to cool.
2. Add the margarine and Stevia Chocolate (Stevita Chocolate), and the cooking Stevia followed by the dry skimmed milk.
3. Bring to boil on low heat, stirring to avoid sticking.
4. Let it cool, make little balls and roll over the grated chocolate.
5. Place each ball into paper liners.
6. Makes 50 brigadeiros

> Easter Cake
Ingredients:
• 1 cup (full) of flour.
• 1 cup (full) of Cooking Stevia (Cooking Stevita).
• 4 eggs.
• 4 tablespoons of water.
• 1 teaspoon of baking powder
• 80 grs grated diet chocolate
• Stevia Chocolate to dust

Method:
1. Spread a easter mold with diet margarine and dust it with flour. Reserve.
2. Beat the egg yolks with the cooking until youobtain a fluffy mix.
3. Add the water and flour, mix well and then add the egg whites beated until snow like and the baking powder.
4. Mix well.
5. Add the grated chocolate to the mix and transfer to the mold. Bake in high oven for 25 minutes.
6. Take it out of the oven, let it warm, unmold and dust with the Stevia Chocolate (Chocolate Stevita).
7. Makes: 20 porcions.
